Happy Monday or Something :)

Do you ever have those days where you feel preoccupied with everything but can’t keep your mind on anything??? I had one of those days today.

serious case of the mondays

I didn’t sleep great last night.  I set my alarm for 4:45am so I could get up, jog and go to Pure Barre – Guess what didn’t happen this morning….

I decided at 4:47am that today would be a good rest day instead – Maybe that’s where my case of the Mondays started.  Note to self: Do not, I repeat do NOT take Monday as a rest day.

I had a delicious breakfast – Hodgepodge usual #1 from the other day!

I finished up breakfast, answered some emails and of course, caught up on my social media, theeeen got to work-work.  I have a wellness seminar for Hillsborough County on Thursday (Really?!? Valentine’s Day?!? ) They are doing a 7 week series on weight loss and I was asked to do the 2 nutrition weeks! Image may be NSFW.

I’m not going to lie, presenting is my favorite… preparing for them is not… I’m definitely working on that!  Beautiful Monday work-space = beautiful Monday head-space:)  Flowers courtesy of my wonderful husband Patrick.

I worked on the presentation till about 12:25 then headed to the new Whole Foods in North Tampa (like 30 mins away!) for lunch and shopping with Ashley!!  We had way too much fun! Image may be NSFW.

 I tried to keep 1/2 my plate fruits and veggies. Tip of the day: Try to make half your plate fruits and vegetables at every meal – it’s fun for kids too! Try to make smiley faces with their plates — And maybe yours too! Image may be NSFW.

I realized very shortly after this picture that I actually had some shopping to do AND I had less than 20 minutes till I had to go.  Usually this is no big deal but I had a lot going against me. I was in a new AMAZING Whole Foods and extremely distracted. On top of that, I wanted to discuss all kinds of fun things with Ashley AND I had some specialty items on my list that I had no clue where to find. Yeeeaaah I didn’t get out in 20 minutes Image may be NSFW.

The rest of the day was kind of a blur – ha! Immediately after leaving Ashley and Whole Foods, I had a meeting at The Centre Club with Loran of Latitude 27 Marketing to discuss, yep, marketing.  She is amazing, and was able to verbalize what I had been pondering and stirring on for 2 weeks in a matter of 30 seconds! Yep, amazing! Thank you Loran!

Because I was running late (dang Whole Foods fun:), I had to reschedule a wine date meeting with Liane.:(  Another amazing woman! By the way, does anyone know a professional scheduler or have tips on how to realize that, in fact, one cannot fly across town in moments and make EVERYTHING. If you know of anyone – please send them my way!

Since I now had an extra 45 minutes before my small group – I ran home to finish the GUMBO ( Fat Tuesday Feb, 12!!) I prepped this morning. I am working from this recipe from Cooking Light – I made it a bit healthier Image may be NSFW.

I am usually not this organized and together but I needed a brain break from the PowerPoint and knew I would appreciate my lack of lazy later in the day.

Aaaaaaaand the kitchen midway  - YIKES!

I got back home around 7:45pm to a busy Patrick who had finished up our salads and was just waiting for me to eat!:) Good man!  The Gumbo was GREAT! I think it will be even better tomorrow though. I am a firm believer that soups and Italian food are better the second day!  More time for flavors to meld or something like that. I had some emails/social media/work to finish up and then headed to bed way later than I wanted. Whoops!!

2) Do you prep for meals earlier in the day or the day before? (I wish I did)
